Came across this recipe for Just Like Nilla Wafers. My whole family loved them!!

Ingredients:
1 cup butter, room temp. For dairy free replace butter with 1/2 margarine and 1/2 shortening
1 cup sugar. For low sugar replace with Whey Low
1 egg, For egg-free use 1 egg's worth of Ener-G egg replacer
2 teaspoons powdered vanilla
1 cup white rice flour
1 cup potato starch
Directions:
In a mixer cream together the butter and the sugar. Beat in egg and vanilla. Add the flour and starch, cream for 1 minute. Chill in refrigerator.
Roll dough into 1 inch balls. Place on baking sheet and flatten slightly. Bake in 375 degree oven for about 8 minutes. Let sit on a baking sheet for 5 minutes. Transfer to a cooling rack. Repeat with remaining dough
